German Apple Pancake

September 15, 2010

You can tell that fall is here.  I knew it because all of a sudden tweets were full of food posts.  Over the course of the weekend they had switched from lemonade and green beans to apples and using up the last of the zucchini.

We bought two large bags of apples from a neighbor a few blocks away.  The apples were $10 and we ended up with 22 pounds!

Needless to say, we got the apples for processing, but when I heard a few tweets about German Apple Pancakes, I knew it was something I needed to try immediately.

We used the recipe from Dandelion Mama.  As you can see we didn’t have a cast-iron pan and it didn’t stick at all.  There are also several small typos in the recipe (few ingredients are forgotten), but it is a very easy to follow recipe and we had success on the first try.

This will definitely become one of our regular weekend treats during the fall.

Thanks for the link, Jodie- I fixed the typos and never noticed I forgot the vanilla in the instructions (they did make it onto the ingredients list!) That’s what I get when I write down a recipe that always just lived in my head.

Glad to see success with a non-cast iron pan, too.

Love the recipe! Thanks so much for sharing your secret recipe. Plus, I think we’ll be remedying the lack of cast iron pan in our house.

I’m not sure which is scarier… those zucchinis or Anthony!
